As to paddles/buttons...PDK can be had with either. May have to get first or second-year steering wheel to get the buttons, but it's a straight plug and play deal.
No, you can't up-down on the same button, either with buttons or paddles, but perhaps a left AND right throttle would work ? Don't know your particular situation, but maybe
some throttle creativity would solve ( or alleviate) the gas/brake thing...good-sized proprotional-rate buttons left and right under your thumbs, just inside wheel rim ? I'm thinking of all the functions on open wheel cars these days.
Tell me a bit more about what works for you now. Must be an answer around here somewhere, right?

I noticed in the pictures that the steering wheel has two buttons on each side, not sure if this is for gear shifting. If not, how would you shift when in manual? Using the shifter?

SteveK--is that a Tiptronic wheel? I know nearly nothing about Tips, sorry. But if you can up and down with one button, that would seem to be the answer. If the button(s) can up/down either side, wouldn't that be adaptable to PDK? Or, better, find a good '09

yes, a little it. but who cares ? you can get a nice tiptronic (with pccbs) in the low to mid 60s... the motor itself is far superior to the pdk car. the tranny is a lot stronger. and you can have a low 11, high 10 second car with some bolt ons. Oh, and you'll be doing consistant low 3's 0-60.

Sorry what's pccbs? Which bolt on do you recommend? I was looking at cobb AP, and exhaust for beginning

So I went to outback with my girlfriend and as I was rolling out there was a 997tt cabriolet in the parking lot. I had a chance to look inside, looks tight. I need to find someone in the Cleveland area to take measurements of the cabin space.
