Choice: Fully Built 997 Turbo or Stock 991 Turbo?

It depends what you are after. It will be much more cost effective to get a 997 and build it up. While the idea of a 997.2 is appealing with PDK, you would be dealing with the new direct injection engine which does not really scale nearly as well with current available upgrades.
You should figure out some power goals, and what kind of tracks you want to run. If going for a 997 figure out how much power you want, and if the 997.2/PDK is up to it. You are not going to get much more than 600 awhp in a 997.2. If that's not enough, go for a 997.1. For track duty you would probably be best off with a VTG upgrade like the 63 or 65mm VTGs.
If cost is really no object then just get the 991 and be done with it.

Had the exact setup as yours, 997.1, 68's, E85, etc (Low 10 sec car) sold it and bought a 991 C2S. The car is so different than the 997.1. My 991 is a Manual and sure the PDK is faster, but for everyday driving the manual is so fun!

Turbo, Turbo S, and GT3 are PDK only.
