Just tooling around 210-225, doesn't go above 225 unless I have been taking it to redline a few times

That used to be the exact range and condition for mine as well (pre new engine)...I'm hoping my trusy technician can figure it out, and knowing him he most likely will and quickly too...
I agree about the water temp guage. Although it does start out low, so it must measure something. My oil temp stays at 225, but often creaps up to the next hash after I get off the highway and stop. Sometimes I hear the fan. Usually after a hot run and then idle the car.

From my understanding the water temp guages in these cars are glorified idiot lamps. They do not show true water temp.

....same with the oil pressure guage. I would watch your temps and if you are concerned, call the dealer and at least let them know. May be a fan relay/solenoid but you would probably get an idiot light showing some sort of malfunction.
My BMW 335 turbo routinely hit 240-245 which is normal (anything below 260) and that is with a stock aux oil cooler!

Well this is because the coolant heats faster than the oil. The water temp gauge is considered useless because who cars if the coolant is cold or at operating temp. Of course if the coolant temp starts getting high then you have problems.
Dropping the car off today. What really has me concerned is if I'm hitting 230 with the most mildest of driving and at night, where is the temp going to go when I can redline this thing a few times...250, 260 ? Hoping the cars cooling fans just needed to be reprogrammed. Normal summer time oil temps for me in the past have been around 212 and up to (but never exceeding)225, and only when really pushed hard.
Brought the car in and mentioned the higher oil temps (was close to 240 when I brought it in) and also mentioned that the rear /purge/extractor fan was no longer coming on (the shop foreman said there is also an oil cooler back there). Turned out the fuse to the rear fan was blown and they also performed a TSB which eliminated the low fan speed. They asked me to keep an eye on the oil temp going forward. They agreed that with break-in type driving (4000 rpm max and mostly below) that the oil temp should generally not surpass 225 even in the S FL heat. Once again the guy's at Champion were first rate. On the way home the temp was about 220, just under the 225 mark.
We'll see how high the temps go when I get past break-in and can get the revs up.
Feels good to be driving my 911 again, even thought the 08 Cayman S loaner was great...love to try the DFI PDK Cayman S for the heck of it, gotta be a sweet little car.
Hope everything goes well. The oil cooler Pete was talking about is actually a heat exchanger, they run coolant and oil through it, coolant removes the heat from the oil. Makes for a nice neat package, no oil lines running everywhere, and it doesn't require any airflow over it.
The new Cayman S' with PDK and sport plus is a blast to drive! Sounds great, goes like hell, I just can't stand the PDK steering wheel!
when I track my car oil temperature goes to 300 and water 250 my mechanic says that is normal on the track, but I'm very concern about that. let me know your advice guys.
At 300 degrees Oil I would be concerned. Synthetic oil handles heat very well but that is the upper limit. I for sure would do frequent oil changes. The 250 degree water temp actually concerns me more as there is no margin of error before overheat. No oil temp on my 996 GT2 but the water temp stays around 200 degrees on the track even in 90+ degree weather.

Before the engine swap the engine compt fan used to run on and off during warm days and somtimes after the car was turned off to evacute extra heat build up; now it does not come on at all.
My fan comes on when parked after long drives or spirited drives on 90F+ days. I read in the manual that it is recommended to park and let the engine run for a few minutes to cool down rather than just turn it off - sometimes not convenient to do, but I try to...listen to one more song maybe. I have never done this with other cars, but it is my first Porsche - like any new toy, I read the owners manual and try to get the most out of it. Maybe I'm nuts though...

these cars are built solid so I wouldn't worry. In sport + mode on my PDK S I am usually over half way on the guage (250 I believe). I have gone close to the top of the guage once after some very spirited driving then being stuck in stop-and-go traffic (probably around 280c). I was redline shifting in sport +. At that point the a/c shut off by itself. I put it back in normal mode and once it got to 3/4 (275ish) the AC started blowing again. That was like 3 months ago, and have never had any kind of problem with the car. Had about 3k miles at the time.
