What is the different between the single sided and double sided?

Also major any known difference between the MTM hood ?

Single sided only has exposed carbon fiber on the exterior while the double sided has it both on the exterior as well as under so when you open your hood, the carbon fiber is exposed. The double sided hood also weighs less than the single.

Unfortunately, I'm not too familiar with the MTM hood.

Sorry to show my ignorance about this, but what is the other material used on the single sided hood? Fiberglass?
Is the double sided hood made completely of carbon fiber?

The other side of the single sided carbon fiber hood is made from DVWP (dry vacuum woven plastic).

Yes, the double sided is completely carbon fiber which ends up being slightly lighter than the single sided carbon fiber hood.
