991 Turbo or 991 GT3??

GT3 vs TT(s) .....different cars for different markets.
GT3 soon becomes very tiring as a DD, but on a track it absolutely shines.
TT(S) will shine as a DD, and hold it's own when and IF tracked.
There's are exceptions in each case.

Owned a 996TT for 8 years, drove a 997.2 GT3.
For me, the comparison/decision points would be:
1. Coupe or convertible
2. High rev, Ferrari type sound vs the more muted TT
3. $ difference
4. Power (including expandibility) difference
Everything else for me is a wash.
Since I have been looking into an exotic, which sound is one of the drivers, a GT3 would be a better fit thi time around

So does that mean that the new 991 turbo and Turbo S don't have the donut feature. Pressing both paddles in won't do anything?

Turbo S: Gentlemans car, GT3 Race Car
In a nutshell: The Turbo S is a gentleman car, the GT3 is a RACE CAR
GT3:
Hands down the GT3 is the better looking car, IMO. Aesthetically, It needs absolutely nothing! Performance wise, it is an awesome performer in a track environment. My first experience with a GT3 was on a racetrack, which totally inspired me to come back to Porsche after several decades... (first Porsche was Guards(?) Red 1970 911E with GT front spoiler, Ducktail rear spoiler and BBS wheels... Honestly, not a very fast car, but looked like it was going 100mph when sitting still). As a side note; GT cars seem to hold their values better.
Again, The GT3 is phenomenal on the track with it's high revving motor and good looks... you simply can't get ANY better than this car, right out of the box!!! When I began to get serious about a Porsche, this was my GO TO CAR.... It felt like it checked all the boxes... HOWEVER, after owning several TT BMWs (e70 X5M and f83 M4), the GT3's power felt somewhat inadequate on the street.
Turbo S:
Not as aesthetically pleasing to me as the GT3, and possibly not as track friendly (although Randy Probst has turned nearly identical lap times with both, back to back!)...but that TURBO POWER is intoxicating and AWD is a plus. I am less excited about the active aero on the Turbos as I understand that it can be somewhat problematic if someone should carelessly run up on a curb or has to remove the front bumper for any type of servicing, repainting, etc. (cost to repair system is $$$$)
I LOVE the GT3 for its appearance, but I don't know if I would be happy with the lower torque output. The X factor to raise the GT3 power levels are surely less cost effective than to lower the Turbo car a few MM and change the bumpers and spoilers....
I ultimately settled on a preowned Turbo S. I will undoubtedly make cosmetic changes to give it the desired look I am going for. I am also certain that I will be able to enjoy the car for a few years and still get most of my money back when the time comes to part with it.

Traded my GT3 for Turbo S.....GT3 gets tiring after a while and lacks low torque that the TTS has.....TTS can do it all.....looks better too in my view....no too much drama....but a beast....sport mode is the mode to drive in all the time except for highway trip where normal is fine...
