There are settings in the PCM for that. I leave mine off when my car starts. Set the climate control the way you want it and then through the PCM you set the climate control.

Did you get your Bluetooth fixed? I had the mobridge system installed into my 05 997 recently by a melb based installer. He does all of PCM's BT work.

I can pass on his details to you if you need them.
