I have a 2011 Cayenne and an 08 911, which quickjack would accomodate both cars?

I would suggest you use a QuickJack rated for 7,000lb because the weight is close to the limit of the 5000lb QuickJack.. Depending on the jacking points, you would need either the 7000lb SLX or EXT. Here's some information on the differences between the SLX and EXT for you:

EXT minimum lifting point spread: 35.5" (29.5 for the SLX)
EXT maximum lift point spread: 66" (60" for the SLX)
EXT overall frame length: 75" (72.5" for the SLX)
