The Cayenne is a heavy car. To answer your question, my '06 Cayenne S has 340 HP, and I think it's barely enough power.
the GTS with 405HP is pretty good though in terms of mass vs acceleration.
if you want to offroad get yourself a Toyota FJ Cruiser... very good offroad even with stock tires, but you have to be a good driver too.

I don't think a GTS would be a good offroad option because of the wheel and tire combination.
I think the new V6 is much better than the old V6, but I would still choose a V8. Go for the 18-inch wheels with suitable tires and it will be excellent off road. If you add the PASM option so that you can raise and lower the suspension, it will be even better.

if you want serious off road then make sure you get the the air suspension and PDCC which can de-couple for off road.

I can't speak for it's off road capability, but there is more than enough power for street driving in my V6. Considering it's a truck, it's really quick. I suppose you will never regret having too much power; but for a SUV, I think the hp in the 6 is fine. Generally I reserve my "hot rodding" to much lower, lighter vehicles.

With the 17" wheels, you have more than a handful of choices with all terrain tires to choose from. With 18", there is only one I found the last time I looked. And with 19" & 20", I did not find any. Having the right tires is probably the most important factor for offroading. Also bear in mind the brake calipers are bigger on the V8s (S, GTS, Turbo) and the smallest wheels you can getaway with is the 18" to my understanding (not 100% sure). This is why I said get the Base/V6.
I am sure you can put different size tires on any of the wheels but you might throw off the computer then you will have to get it re-calibrated. I have no idea if this is something easily programmable by your local Porsche dealership or if this is something more involving than you want to deal with? Bear in mind the computer in the Cayenne is pretty high tech in my opinion as I recall there is a list of tire size to choose from if you make any changes in sizes.
Although I have only driven the old V6, which I do find underpowered for city driving. I wouldn't worry about it because the new V6 seems to have been upgraded by a lot and the fact for offroading, you only go 5-15 MPH most of the time.
Lastly for the suspension, just get one with PASM and that should be satisfactory for most people. If you need anything more than that, you are either looking at the wrong vehicle for your kind of offroading or you are looking at a lot of custom fabrication which I doubt that is something you are looking to get into?
