I have an opportunity to trade my 2007 C4S for a 2007 GT3
GT3 has 7,700 miles and was a $110,000 car
My C4S was a $105,000 MSRP car and has 12,500 miles
The delta is $25K plus tax and tags.....
That is $60K for my car and $85K for the GT3
Is $85K for a low optoned GT3 in the ballpark?

$60k for my car is pretty good, so I am interested
The best deal I have got for a new GT3 to my car ($122k MSRP) is $58K; so for $25K to this car (used 2007) even though it has few options might look better.
I plan on taking the bubble wrap off it and driving it

If you keep your eyes on the market, you'll see some sub $80k deals on GT3s. The asking price may be 85-90k, but the sellers are starting to realize that the market pricing continues to drop and will consider all offers. There are even some dealers that offer deals for under $80 (non-CPO). However, make sure there are no stories on those cars (mods, damage, service issues).
Curious why you didn't grab that car from another 6speed member which recently went for 80k? I think that was local to you (Florida) as well...

I would either ask for a CPO on this particular GT3 for 85k or wait for one that has the options you want and a CPO. There are a bunch of them under 10k miles out there.....and price will continue to fall.

OP -- you will have no regrets and the 3 will certainly be easier to sell in the long run...
Totally agree with this. Having to deal with selling current car and looking for new car really limits your options. The dealers will get you on both ends (trade-in and new purchase). Selling the current car first will get rid of a depreciating asset and put cash in your pocket (or stop the outflow of car payments). This will really open up lots of other options to seek out deals on other GT3s (from private parties and dealers). Probably will save you 5-10k as well...
