"oil level 155%" is this ok?
What year Panamera do you have? My wife's 2018 doesn't show any percentages. There is a graphic on the TFT that shows the engine and the level of the oil. We have a little over 4000 miles on the car and the level hasn't dropped.
As an aside, I hate not having a dipstick.

My assumption is he was told how many percent the PIWIS2 tool shows to the mechanic.
His mechanic stated the Panny needs to be at 200% to be full, and was showing 155% at time of inquiry, despite his oil level showing empty, and was recommended not to add any.
I do not believe any Panameras show any percentages (at least in V8 versions) for oil level. They show graphics as ones attached in top part, under OP original comments.

My PPTS showing one segment below MAX, I have topped up about ~300cc and when readings reappeared after driving those 6 miles
oil level readings are still at the same one segment below MAX......
Just wondering if somebody knows what is official Porsche procedure for checking this oil level sensor if it is faulty

Only way to check ploil is with the cluster info.
if 1 segment below max, keep driving to see if it falls to 2 segments below max. It could have been almost 2 segments below when you added, and not enough to show max. If you're paranoid, change oil to see if makes difference.leave filter alone and drain oil. If you catch into clean pan, you can reuse, otherwise will cost you about 50 bucks for oil. But you will gain peace of mind.

It is a bit strange that there is no other way to check it... I know that on Audi cars with the same oil level monitoring system
oil level can be checked at Audi service center through dedicated check point with a stick .... I mean that normally this stick is not fitted
like used to be on older cars but there is a point for it, maybe even such stick can be ordered ....
Because I have changed oil just 3000km ago I think that instead of waiting or draining oil I will add another ~200cc to see if it will make any difference

Interesting - it looks like they make a dipstick for the Hybrid models:
