I think you guys should look into staying at the Red Rock Casino. It's off-strip very very car-friendly, and only minutes away from the best desert circuit in the USA; Red Rock Canyon... 13 miles, one way, two lanes, National forest land that is never patrolled. Roadway is like a billiard table and the loop can be as challenging as you like, with over 100 inidividual corners...
Look into it guys. I live here, so I know.
edit: i should mention that the Red Rock Canyon loop is touristy on weekends, but it's great in the mornings, and all the time on weekdays.
