I've taken my GT on a few weekend trips with a passenger with no issue but yes, I needed to do some pretrip planning on luggage. No hard case carry-ons can fit inside the GT but there's room in the front trunk for a soft duffle, and maybe in front of the passenge seat on the floor. A small garmet bag can be hung behind the seats using suction cups to the bulkhead glass. There's you have it, a GT for short trips.
The worse design of the GT is probably the doors and yes they do require a lot of room to open even half way and the top of the door makes getting in and out very difficult. But there's been a couple of solutions for that and one coming soon. Check out www.fordgtforum.com for more insights into the most beautiful car ever made, IMHO.
