Compression Test and Leakdown Test numbers

Hey guys, I'm thinking of doing a compression test and leak down test on my engine. What is considered good numbers for these test?

I'm guessing 5% +- 2% leakage is ideal for the leak down test?

But what is a good psi range for the compression test?

Also, what do I need to do to prevent fuel from being squirted into the engine when manually cranking it over?
