Need More Exhaust Sound for my Europipe
Like most have already said...your best option at this point will be to switch the whole exhaust to something new unfortunately. If louder is what you want, then something cat-less is definitely going to suit you better. But...keep in mind that without cats, you'll also want to get an ECU tune, to avoid getting a CEL. The up-side to getting the tune is, of course, the ton of extra power you'll get along with it.

That sounds awesome!! How about the drone at highway speeds with the windows up? BTW, my car is already tuned.
Believe it or not, it's actually quite mellow inside the car at normal cruising speeds. The key to that is the rear muffler. Even though we use straight bypass pipes in place of the cats, the rear muffler is designed to compensate a bit, keeping it pretty mellow when the exhaust flow is minimal (like highway cruising). You do hear more exhaust sound, but droning isn't an issue.

By this video, seems like catless might be a solution. What's involved in hollowing out a set of cats? Or do I just need a bypass pipe?

I would not hollow out the cats. I would just chop them out and weld on straight pipes. No sense in ruining those nice 100cell cats you paid for.
Speedtech gives a GREAT exhaust note especially if your'e looking for more sound
I've got a stock 997.2 and prior to this car never did any tunes/exhaust changes to any previous car. So for what it's worth, I LOVE my speedtech exhaust. I initially went with their "muffler delete system" which gave only a little bit improvement over the stock exhaust. Honestly...I was very disappointed after I got just that piece installed. I spoke with speedtech and they recommended I get their "hi flo cats" installed which i did. I can not explain to you the grin on my face when I started that car up for the first time. Everywhere I go I turn heads. I LOVE starting the car up...love driving it even more now. I would caution you that it may even be a bit too loud for some people, but if sound improvement is what your'e looking for..you'll get it with speedtech and won't have to break the bank either. Yes it through off my O2 sensor and there's no way around that it seems without a tune. I had O2 extenders put in...worked fine for about an hour before the codes went off again. Whatever...I plan on tuning soon anyway so not an issue for me. If you want me to send you a clip, I will gladly send them to you. I made a few videos and uploaded them on here if you do a search. If you're in the Philadelphia area...I'd gladly invite you over so you can hear for yourself.

BTW - it's our Race Cat Bypass Pipes you installed - that's why you are getting so much more sound, along with the CEL. Our 997.2TT Hi-Flow cats would be louder than your former OEM cats, but not as loud as the bypass pipes you installed, nor would the Hi-Flow cats activate your CEL...
And if you ever want to cure the CEL, we can supply a catless race tune to eliminate that, as well.

Just keep in mind that catless as well as many other louder exhausts will likely have a lot of drone. The 997 TT is very susceptible to drone and it really is exacerbated by many aftermarket exhausts.
So before switching out the EP1 make sure you get a test drive in a car that has an alternative exhaust and see if you will be ok with highway cruising speeds, because 30 minutes of drone in the cabin on the highway will drive some folks nuts.

My TTS doesn't really have much drone that I can notice if I drive without sport mode on...and I don't have cats (I've got SpeedTech's catless 3" race exhaust w/o mufflers). The DFI motor in general is pretty quiet.
