Yes, in sport+ mode there are only 6 gears available, all other modes have 7. Check out the video in an earlier post and you'll see that there's still some left, i just ran out of runway

and sport plus for acceleration or racing in general.
Basically yes, although i started with Sport+ and only switched to Sport when i had to as the gear changes are faster and so i could use launch control.
