Offset makes a huge difference, but here are some possible combos, the wider the rubber, the higher the offset needed.

245/35/19 or 255/35/19 with a 325/30/19

265/35/19 with 345/30/19 if you are brave enough!

What wheels are you using, stock 997.1TT wheels?

I run those rims you mention in your post both in 19s and 20s. If running 9s in the front and having 245/35s on them.. I can tell you that when turning all the way to the right, the tire will rub on the upper inter-cooler hose (driver's side). When I have my suspension replaced, I will replace both hoses since the access will be readily available. Your alignment in the front may not have this effect, mine is set aggressively.

These are some CCW Classics that I helped a local customer out with, specs are:

19x9 +43 with 245/45/19
19x12 +39 with 325/30/19
Lowered on springs
No fender rolling or rubbing

Based on the offsets you provided for your wheels, I say you are good to go with a 245/325 setup!

It depends on the offset, but, I am running 245/35/19 and 325/30/19 without any issues. No rubbing under heavy turning or any issues. I am running PS4s and just switched from R888s 235/35/19 and 305/30/19.
