Removing/replacing the cats
Depends on the state of the fixings holding it all together.
When I did mine the nuts that join the cats to the manifold were rotten, had to strip the manifold off of the car and get the whole assebly in the vice to get it to bits.
I replaced everything with A4 grade stainless nuts and bolts.

took me about an hour as a DIY. I installed Fabspeed cats which were 1 pcs and removed the OEM cats (2pcs). I also bought 2 new gaskets as were recommended. Just dont forget to unplug the 4 x O2 sensors which are in the engine bay and mark which ones are which. I would say a 4/10 for difficulty.
