What is done during the yearly service? Aside from an oil and fliud check etc...are any other fluids replaced?

It all depends on what year service you're performing:

Year 1 - Oil & filter

Year 2 - Oil & filter, pollen filter, wiper blades and brake/clutch fluid.

Year 3 - Oil & filter and air filters.

Year 4 - Oil & filter, brake/clutch fluid, manual trans-axle fluid, clean throttle butterfly.

Year 5 - Oil & filter and coolant flush.

Most of the other stuff done during these services are check this, lubricate that and top it off etc. Hope this helps.
