Any idea at all if these would fit in the rear of a 997S with an 11.5" rim (the tires are approved for the rim size, but I was just wondering--you can probably tell I'm a neophyte--about possible rubbing issues in the rear)?

you shouldn't have any rubbing issues with these tires vs your stock ones.

if any, you lose ~ 1 inch on the diameter

Overall Diameterfor 213/25: 25.20 in (640.08 mm) vs Overall Diameter for 305/30: 26.20 in (665.48 mm)
