the GT3 is limited for dealer?
Today I contacted the dealer who sold me the Cayenne turbo, he told me, GT3 is unavailable to order right now, this year only one available and its already sold, but later, he tried to sell me the 911 turbo. So I don't know its true or not about the GT3. If that's true, means I can order the 2009 GT3, but the problem is wait for it?

Production of the 997 GT3 is finished. There are no planned allocations for 2008, and the whether and when a next build will happen is everyone's best guess. So your dealer is not lying.
It is reasonable to expect that Porsche will launch a face lift version of the 911 at the Geneva car show in March 08 with a new direct injection engine, and that a revised GT3 will follow either for the Paris autoshow in Oct 2008 or most likely in early 2009. Factor in the usual delay for US deliveries and ... be patient.

He said this year, they got one 2008 GT3, also he said he trade two 911 turbo , one 911 turbo cab, and one Cayenne turbo(total 4 cars), just for get one GT2, so the GT2 is over sticker price and already sold.

Nope, no more GT3's. The odd one may come up that another dealer may not want
, and then your dealer MAY be able to get it, but don't hold your breath, and expect to pay a premium.
997 GT2's are very heavily allocated and most dealerships probably will not get one, the majority going to big dealers in California, Florida, New York, Texas, etc.
Also it is going to be a while for the "Mk II" (or whatever they will call it) 997 GT3, assuming of course they make it, which most presume they will (since Porsche wants to continue their success in racing), and some webpages have confirmed. The new facelift 997 has to come out (soon) then the new faceleft 997 Turbo in a couple years then the new facelift GT3 in another year or two. In the mean time the new Panamera is coming out, and the Hybrid Cayenne (and maybe diesel), so Porsche has a lot on it's plate.
So it may be 3-4 years before we see a new GT3, but then again who the he** knows...as soon as they max out all the profits they can on the old GT3....SURPRISE!! (I doubt it though). What influence the economy, gas prices, "global warming", and technological advances in hybrids, diesels, biofuels, electric and maybe hydrogen power, will make is yet to be seen.

yup its true, no more GT3s, most dealerships will only get one if any, and these are the big dealerships that do lots of volume. BUt if you still want one, expect to buy a slightly used one or pay a premium for it.
