P16 PCM 2.1 - don't need, but it is a street car so nice to have in conjunction with 640 - you can do a lot of data logging on track.
450 Ceramic Composite Brakes - PCCB
P74 Bi-Xenon Headlamp Package
XSY Seat Belts - Speed Yellow - go with black - will not look good with green stitching (which will be very cool).
XXZ Foot Rest Aluminum
EZA Interior Package Carbon (Deleteable) - delete if you go with painted ctr console
EZB Carbon Package Switch Panel (Deleteable) - same as above
XME Rear Center Concole Painted Ext. Colour - go carbon
CDP Instr Surround Painted Ext. Colour - stay stock
24901 Dashboard Stitching Dev. Colour (Deleteable) - go dev. stitching it will look great in green! - I will post my car when I get (all same dev. stitiching in Orange) next month, you can decide then
24902 Door Stitching in Dev. Colour (Deleteable) -
24903 Door Handle Stitching Dev. Colour (Deleteable) - same
24904 Dev. Stitching Side Center Concole (Deleteable) - same
24905 Rear Side Panel Dev. Stitching (Deleteable)
24911 Door Pull Handle Dev. Stitching (Deleteable)
25851 Seat Stitching Dev. Colour GT3 (Deleteable)

My car, completed today, due in 5 to 6 weeks:

Orange/BLK
full leather
PCCB
Xenon
PCM
PCM painted black
Rear Center console painted black
All dev. stitching options

Check out this poll I put up and see what people choose for options:

http://www.rennlist.org/ then go to 997 GT3/GT2 and do a search for 997 GT3 RS Options Poll - most popular items were Xenon, Full Leather, thicker steering wheel and PCCB - otherwise not much concensus on the balance, all personal preference.

Good luck

JCM
Thanks for the advice JCM... my options in colour are #1 Mexico Blue #2 Green #3 White... and either i go with minimal options like having full leather and bixenons and PCM... or go all out with carbon, stitching and painted parts... i will seriously consider your idea of green stitchings!

Alan, can you get Mexico Blue? That would be aweseome but thought paint to color is not an option in the RS.

I'd be careful of the yellow belts, if you paint some bits in exterior color. You'll have a green/yellow combo in side the cabin.

I'm a big fan of Mooty's spec.

I thought about the full leather but it would be a waste when I change the seats out to either the ROW seats or Recaro's. I will occaisonally use it to visit clients during break in so I got the nav.

Full leather is a must for me... i can't live without it in a Porsche... plus it adds all alcantara parts on door panels and seat inserts... i do agree with you on switching the seats out for ROW CS RS Seats... the nav is should be a must too... i don't have it on my GT3 and the center dash looks too plain IMO...

Mine will have:
B4 Carrara White
78 Full Leather
P74 Bi-Xenon
450 PCCB's

I am considering the steering wheel standard Alcantara or XPA Thicker Wheel. I went back and forth on the Full leather. Not much weight and smells nice.

haha i am totally in on the smelling nice part! and go with the standard Alcantara... the thicker wheel sucks... i have it on my GT3... its not thick at all and you loose the good feel of the alcantara... if you want thick wheels check out FVD or EVO or RUF steering wheels... i have one sitting in my office... thats Dark and THICK!!!
