You probably have to do a stated value insurance with a company like hagerty.

I use Hagerty for my Jensen Healey using agreed value of $6k for only $120 a year. There is a couple thousand yearly mileage cap but that's no problem.

A lot of companies offer Classic/Specialty insurance with a stated value and limited amount of miles/yr. I know AAA does it for classics and I think Mercury has something like it too.
