I think unless you run race gas you can only make like 600chp or so.

There are cars making 550-580whp which is over 600chp. Pump gas 93.

580awhp translates to 700chp on the panamera, correct?

There isn't an exact number to be translated to as we never know how how drivetrain loss there actually is. If you consider 20% then you're at 696chp so 700 is a good a good guess.
