Not sure if you need a certificate of compliance to Greece...

https://www.freightright.com/kb/certificate-of-compliance

Maybe just a certificate of title?..and not have a lien

...and from what state? Maybe your dmv would know more

last but not least, love their salad

I've done multiple assignments across the pond and only taken cars over once. Your best option is to try to keep them on US plates and find overseas insurance.
Officially importing them is a royal mess, you'll most probably need to change the lights, etc...=> $$$
The good news about Greece is that they are low on the ethics list, so must probably you can 'buy' a compliance certificate and stamp.
Do they have a US ex-pat organization in Athens ? If so, sign up and ask a question on their forum. The answer may actually already be in their Q&A section.
