I have a Aiptek HD+ and a Contour HD that are mounted together facing fore/aft opposite each other. Both take excellent video of which I haven't uploaded any yet, but you can find videos of them everywhere. I bought the Aiptek + 8gb SD card for about $130 and I bought the Contour HD with a 16GB micro SD card for $250. I also bought an IO Port mount of a friend a few years back for change.

Here is my setup.

I use a Kodak Playsport which has worked great and shoots up to 1080p HD and it's in expensive. The Go Pro is a nice unit also.

Here is a clip from Infineon shot with the Kodak Playsport from my Audi. I've heard some people say NASA doesn't allow suction cup window mounts but I've used mine on 3 NASA events last year without any issue's.

I've been using the GoPro HD Cam for a couple of years now. The latest version has been a significant enhancement from the previous model and has been very reliable and creates great videos.

I also have a ChaseCam but the video quality is much less than the GoPro. I just purchased a Sony HD Handycam that links to the new HD Traqmate system and will be trying it for the first time this weekend at a track event.

Here are some of my videos that were taken with either the ChaseCam or GoPro: http://www.youtube.com/user/speedncontrol

Have to tell you the videos turned out really good.
I would go this route if your looking for something basic and have a iphone 4 already. You can couple it with the tomtom mount and harrys lap timer app for about $100 and have HD video with overlays of every other lap. I used the lap timer at nelson ledges a few weeks ago and it worked great, havent shot video yet since I did not have a proper mount for my car.

I really like the GoPro's versatility and size. I mount mine inverted on the rear window. I'm still in the learning phases at the track, so this gives me the best vantage point for a lot of things I'm doing (incorrectly lol) in the car, on the track. I didn't see any vids mounted this way. Take a look:

Yeah I use my gopro mounted on my rollcage, basically the same location. I was going to use the back window inverted before I got my rollcage mount but didnt like the vantage point it was giving me plus it is nearly impossible to get to the camera with a cage in the car. Its even hard for me to access my camera when its mounted on my cage to turn it on and off so I dont kill the battery.

Here is one vid at the Glen

Here is why you shouldn't mount your camera to your helmet haha..Just installed a roll bar (cab.) so next time out I'll try a few different areas like roll bar or windshield

Awesome vid, and nice angle. I like how yours is mounted. A little closer than mine, but too close. One can see everything going on with the driver.

Quick car, too! Matter of fact, the interior looks an aweful lot like the interior of an SN-95 Mustang.

Yeah that my track beater, its a 2000 GT with no real power mods but lots of work to the suspension/brakes/etc.

Btw I had some trouble trying to embed the vid obviously, copied the YouTube embed link and got nothing. What's the trick to embed?
