Don't know if this reply comes way too late, but, maybe someone else will be able to benefit from it. I mean, I wish I had known...
I just put a Nitto NT-05 295/35/18 on a 12x18 rim. The 295 is too narrow. It goes on, but it's really stretched. Hopefully, it's safe. I plan to try to wear these out as fast as possible, and go back to 305's or 315's. Some may say that 295 is only 10mm narrower than 305, but it's not. With the difference in aspect ratios (I guess), and possibly different tire manufacturers, the NT-05 295 looks to be about half an inch narrower PER SIDE than the TOYO R888 305. I can't see how a 275 would go on a 12inch wheel at all.

I would love to see everyone put up their successes and mistakes in tire/wheel fitment, so we could all benefit.

I would suggest using Hankook Ventus TD in 295 and 235 or 255. It's an R-comp that is faster than NT01 and that I found was definitely wide enough for 12x18 wheels, and I found my laptimes to stay within a second during a 2 day track weekend. They are available online.
