Road course as in track? There's none. Sebring is 2 hours south.
Road course as in spirited country drive? there's some fun roads in Lake county, but I'm sure no where near the fun you'd have in the Carolinas.

Blue Ridge parkway is very nice to drive. But I was looking more for a course where I could increase speeds and race if possible. after searching, I found www.projectexotic.com but doesn't look like this has been finalized yet...

Sebring is your best bet. Gainsville road course is a distant second. There's a CFRC track in orlando, but they've been catering to drifting, karts, and 1/8 mile, and I wouldn't recommend it anyway.
