This question is for those that had a 997 and upgraded to a 991 and used the rear seat for children.
How much more rear seat leg room do you feel the 991 has? How about rear seat width?

I have not had the experience and jump from a 997 to 991 but I did take the Porsche child seat from my friend who had a 997 and put it into my 991 and he claims the 991 has just a tiny bit more room than the 997 (2011) that he used to own. From what I can see in my 991 the seat fit with 0 issues and works well. Looking forward to being able to lug my sons around in my baby!
I had a 997 and I now have a 991. I remember reading somewhere that, in theory anyway, there's less than an inch of extra inch in leg room in the 991. I don't know if head clearance is diminished due to the change in roof line. Whatever the precise measurements, the difference is imperceptible. The one thing you can say with confidence is that rear seat leg room is great than that of a Cayman, Corvette, Audi R8, Acura NSX, Lambo, and almost all Ferrari models. Seriously, the availability of admittedly small rear seats are what landed me in a Carrera 4S. Otherwise I'd be driving a Cayman S or GT4. If you're trying to chose between a 997 and a 991, I don't think the difference in leg room is enough to be a deciding factor.
I've never had anyone sit in the backseats, however, I have used them on a 997 and a 991 for luggage. I place a fairly large duffel (Hartman) on each seat and flip the backrests down. I place more luggage on the lowered backrests. Anyway, I noticed that there was at least one more inch of room in the 991. In the 997 I had to move my seat a bit further forward than I like (I'm 6'3''). In the 991 I can keep it in my favored position. I need to mention that I was trained in the late '70s in Europe to drive with my arms stretched a bit to the steering wheel, as opposed to today's recommendation to sit up close. I prefer the old way. Thus, my seat is pushed back quite a ways.
