it appears that a 225/35 front and a 305/25 rear on 19 inch rims most closely approximates the stock set-up. With minimal looking I found that Tire Rack has PZero Asimmetrico in the 305's and PZero Nero in the 225's. I'm contacting Pirelli to see if they make both sizes in one or the other. Somebody else probably makes the sizes. If anyone finds other brands, please let me know.

I thought that 295/30 on 19" wheels best approximate the rear stock setup?

it's not the best. if 295/30-18 is the stock 18'' set up (GT3) then the 295/30-19 will be much taller. the best 19'' set up will be 315/25-19.

What you must do is look at the tire manufactures web site and see the overall diameter of the tire, it varies from every manufacture. So if you want to get a true match just do some research.

For example

Michelin PS2 - 295/30-18 is 25.0 in.
Continental ContiSportContact 2 - 295/30-18 is 25.2 in.

I'm not a Fan of Pirelli PZero's at all. I'd rather go with a more narrow tire than go wider (and closer to stock) with a PZero.
