Removing the sound deadening material would be fun too since it should produce more aural satisfaction.

Drill dollar sized holes into the body and turn it into a space frame. That'll save you several hundred pounds.

I heated my GT3 seats when I had them and you can paint the backs too. You'll save 64 lbs, but more importantly the car will feel more gokartlike and you will receive a lot more communication from the car through the less padded seat bottoms. Not only that, the lateral support on the stock seats suck **** and cause you to use the steering wheel to hold yourself up in higher g corners.
Are the GT3 seats height adjustable?

You mean easily everytime you want to (like easy as moving em forward and backward)? If so, no.
