"what do stock cars boost to running an exhaust only (no software) say like Fabspeed w/ 100 cell cats ?"
I never saw more than .8 with my k16 and speedtech 2.5" with 100 cell cats.
After my UMW tune I see up to 1.1, but normally 1.0
