That's because your temp gauge does not reflect the real temperature. As a matter of fact, if your engine temp WAS only at 180 (most likely it was 200F+), your engine would not be running at it's maximum efficiency. I'm installing several gauges; including EGT, air/fuel, boost(in psi), oil temp, etc.
