Timing, RPM, Throttle Position

1 - WOT
2 - LOAD > 38%
I then manually filtered out a few data points that were obviously not part of the pattern.
My primary objective is to explore 2nd gear. 3rd seems fine (as you are eluding to). My data shows a combination of pulls in both 2nd and 3rd. Thus, making the data shown a conservative representation of my situation and perhaps understates my primary area of interest: Exploring the phenomenon of NO WHEEL SPIN IN 2nd gear.

The point I am attempting to make is that this may very well be the pullback in timing of the variocam. If that is the case, then it will occur in all gears where WOT occurs from low RPM. To verify this, you need to kick the variocam to it engaement point and shift to the next gear, and continue WOT so not to have the cam drop it's lift. If the timing is higher after the shifts for the same RPM points, this would point to variocam timing pullback.
