Straight Pipes for 997tt
Sounds to me like you might be better off with a Tubi or Cargraphic exhaust system with cat-bypass pipes. That will give you exactly the effect you're looking for.

To open up the stock 1 peice sytem and remove the 4 cats is a big undertaking,~5k to do it right. But, to what end?
Just buy a decent aftermarket system with cats, there are systems out there that have hi flow cats and can be tuned noise wise to your needs, ie FVD. 'Simply' removing the cats will add very little real world performance to a 3500# street car.

My system is not much more loud than stock till 3000rpm. The only difference is that i can hear now the turbos. I doubt that the sound will be much more higher without the cats. If you don't care with the CEL light or will tune the ecu to clear the light, go for it.
I don't see the need to make that. Just open the stock system in the welds near to the turbo flange, clean the cats inside and weld it again. I opened my system through the welds carefully to remove the OE cats and end up messing them, so don't care about it. That is a $100 job with the muffler out of the car.

if you have something specific that you want to do ( material - design - etc ) no one can help as it is your idea, but If you want just to get rid of the cats here is your option:
1) just take off the factory cats and put the system back. This way you guarantee a good fitment and the cost will be lower for sure.
2) make your own pipe and weld it to the factory muffler. 2.5'' or 3'' no one really can help as it involves a lot of engineering regarding the air flow and heat transfer specially when NO one know what kind of material you are going to use and what design you have.
3) full straight system ( no cats - no muffler). As I understand money is an issue and you are trying to save ( we all do
), so Fabspeed bypass cats and bypass muffler is your best option. I have heard it in person and it was not bad at all but not the best for my taste. I had the bypass muffler pipes on my TT then switch to full cargraphic system and I will never go back to straight as I love how my car sound now. I do have the fabspeed pipes if you are interested ( cats and muffler ).
