Some upgraded clutches have engagement points that are much smaller, meaning your ability to modulate the friction point is limited to a smaller range. The hydraulic assist removes some of the driver's feel of the pedal. Removing the assist allows the driver to have a better feel of the engagement point.
You should also consider posting this on the 996TT forum as the clutch systems are the same. There are far more users in that HP range on the 996TT platform, who will be able to give you advice.

At 700hp, the Sachs setup will probably not be enough. I had the Sach's stage 2 clutch with the LWFW and it could not hold the power on my car. I just got it replaced with a Clutch Masters stage 2 clutch with a stage 3 pressure plate. 3900lb of clamping force. This is a Fiber Tough/ Organic disc that gives you almost stock drivability. CLutch Masters claim that is will hold over 800hp.
