Does the oil automatically get changed

when the dealer replaces a clutch; or is it not affected at all when they seperate the engine from the trans?

Should not be removed at all, unless the rear seal is gone which would have killed your clutch anyway, then they will normally replace that drain the oil and replace the seal.
