how much is fair
I'm not sure that there is a market for used (or new for that matter) stock exhaust systems - for the exact reason that you're selling yours. So...I would think that virtually any offer is fairly good.
Like other's have stated, worth very little. Kind of like when I replaced my OEM front and rear bumper with aftermarket. Basically offered them for free if anybody wanted to come pick them up and got no takers.
Could not get crap for the complete 997.1 system from the several used Porsche parts sales places; finally got $150 for the cans/tips and cats on ebay. Not worth the time I spent screwing around, yakking on the phone, packing them up, and arguing with the buyer about the UPS charges.

To me, the only benefit of holding on to the stock is when you go to sell your car. It can be used as a negotiation tool - with limited, but reasonable success. If you're asking a fair price for your car with PSE inclusive, but the buyer is not budging, you can tell him/her that you'll swap the PSE's back to stock for the price they want, then sell your PSE's which should net you ~80% of purchase price depending on miles and condition. For many, this is not worth holding on to the stockers though, unless you or your dealer has plenty of space to store them.
