Options are expensive on this Porsche cars, the options alone could buy me a new vehicle. Nevertheless, please let me know your thoughts on worthwhile options and what might not be the best value.

I'd say the car is merely well-optioned, not over-optioned at all. You could spend the same 17k on a different set of options if you wanted a different result, but in neither case would you be gilding the lily. Porsche do not intend their cars for sale at the base price, and not primarily for reasons of an advertising lowball. Probably not at all in fact. It is the range of interests among Porsche owners.
From the base car, you can move in one direction toward a daily driver intended to cosset you in heavy traffic while remaining a great sports car when you hit open roads. Or you can move the opposite direction and build a car that is blindingly fast on track days though it would be a little wearying on a freeway commute. You can basically buy a race-ready world beater off that option list. All you'd need to add is a race mechanic and a day in a garage stripping off the keep-it-street-legal stuff to mount a CalClub campaign. (Check the GT3 RS version if you want to see how high that base price can be lifted. It must be around $150k.)
The base car has to accomodate both directions of movement so it leaves off a lot of things we immediately toss for racing or even serious track day use. You would expect a nav system stock on a 100k car, but not if 20% of the owners plan to seriously run the car on tracks. For that purpose, most of the "I expect that stock on a 100k car" options are just so much weight.
Personally, my racing days are done. I'd love the car you're looking at for daily driving, and if I did make a few laps of Willow Springs just for old time's sake, I'd know that like my own C2S, that car wouldn't embarrass itself.

Wow. Pretty well optioned and you didn't even go crazy. If you go deep, you should get full leather as well. Be sure you convince yourself you want PDK. I know you're in LA, so it's understandable, I guess.

Add aftermarket exhaust later on. The sports seats and adaptive sports seats are the exact same... except sports are manual and adaptive are power.
You might want to add full leather too. Really dresses up the interior.
Forget the PDK (real sports cars have stick shifts), Sports Chrono and upgraded exhaust (this option reminds me of being a teenager).
As for the seats, thats a personal choice...sit in both.
Unless you track the car, dont bother with the upgraded sports suspension either. Whats the point?
