Gundo Hack in Austin, Texas
Ideally you want to find a shop that does true stainless steel welding with stainless steel pipe and there aren't many of those here, especially ones that offer to do custom work.
When I did this about three years ago on my 997.1, the only place I could find was Colvin Automotive on Hancock Drive. Other shops I looked at recommended them. This may have changed since then. The problem there was they had no idea what a Gundo hack was, but if I provided them with photos and descriptions they would do it.
Due to the amount they wanted and the uncertainty that they would do it right, I just went with the Fister version and paid for the shipping costs back and forth. It may have been more cost but at least I was 100% it would be done correctly and in materials that wouldn't rust out. If you still want to go the local route, maybe someone else on the forums has found a better source for this.

The advice on stainless welding is sound. If you cannot find a custom exhaust shop that welds in stainless, then go to a welding shop. They'll do a great job. Most welding shops are well-practiced in welding in different metals.
I did it myself. Overall it isn't that bad, but there is one pesky bolt/nut at the top of the passenger-side muffler that you have to hold on both ends (all of the others are pressed-in studs that stay in place). Many say they've found it easier to remove the rear bumper, but I've made multiple changes over time without it. Maybe the upper bolts are easier to reach that way. I've figured out how to deal with it reliably with the bumper on at this point and with no special wrenches.
