Those cars were designed to handle from the factory, although most people rarely talk about it, the 69 Z28's KILLED the Mustangs in Trans-Am that year. One reason is that they had a small block up front. If you want an all around sports car, go for the LSX and the 6 speed, you won't regret it at all, I promise. RDuke was right on the money with his post. Unless you're going to put a Fuel Injected 302 (Please consider this option, please please please... built correctly it revs to 7.5k!) Go with the LSx.
I think I'm gonna take our 69 Z out this weekend, I'll try to get a video of it. We have the 302 and the sound is spooge worthy.

I am kinda done with the whole first gen give me a nice split bumper 72 and call it a day!
