Dude, stay away from the ramjet if possible. It looks too 1980's pro-street cheesy. Also, an extra 600 lbs of iron hanging off the front bumper for the bigblock makes going around corners a little difficult. It will be a dog compared to your 67 fastback.
Go LSX and never look back. You can even get 427-454 cubes now. For the under the hood look try staying away from the chrome too. It's a little played out. Check out Kensler for the intake. It's a sweet set-up http://www.kinsler.com/page--GM--17.html
If you're looking for someone local to do your build who has a good rep give my buddy Leonard a call over at Dominator (Brendwood) http://www.dominatorusa.com/index.htm They do great work.

Check out the Motown small blocks.... http://www.theengineshop.com/prods_pages/101008.htm
If you want exotic go with the all aluminum 427, I'm running the iron 427 in my '69. If you want more power, supercharge it.
The ZL-1's and 572's probably wont fit under a stock hood.

Forget the 572 and go as was mentioned with the small block LSX(up to 454ci) or even a built Ls2 or Ls7 and you will have more performance without the weight, with an aftermarket subframe and components you will save a ton of weight and will have a much better handling car. If you want something really custom and are willing to spend the shekels you should go with a supercharged or twin turbo charged engine. My next car I build will have a built LSX or twin turbo from Nelson Racing. They can build you a nice car also btw.
I am kinda done with the whole first gen give me a nice split bumper 72 and call it a day!
