Is it much louder than just opening up the exhaust valve on the stock muffler? That's basically a bypass to an open pipe isn't it? That's why I want to delete the cats or go high flow. The cats really kill the noise and I like it loud but also want to be able to keep it toned down when around the house so not to tick off the neighbors. I figure the best way is to delete the cats and keep the muffler that I can open and close remotely.
I have the VAP tune (if you don't have it, get it) best mod. I had the 200 cell cats and really enjoyed the sound and performance improvement. I took it to the next level and installed the cat deletes several months ago. I prefer the 200 cell cats overall. Sound is glorious with cat deletes but the smell is undesirable to me. I also have the stock exhaust.
If interested, I'll be letting the cat deletes go at a good price. Plan to pull them off this weekend.
I just ordered the 200 cell cats and updated tune from Velocity AP yesterday. Looking forward to the improved exhaust note and modest performance increase. Have been running their stage 1 tune with stock exhaust for a couple of years and really enjoy the improved responsiveness.

The pop on decel is a tune mod. I agree with those above that it had a tune done for this. With VAP headers, 200 cell cats and stock muffler, I only occasionally got any snaps or pops on pedal lift off or downshift. My tune Stuart @ VAP is making now will have enough snaps and pops to make a 12 year old smile.

Not sure if anyone answered you question (TLDR). The popping and crackling is noy coming from your muffler so much. It's likely coming from the tune that was installed. If you find out who did it they can reprogram it to get rid of those obnoxious noises.

My new-to-me 2007 V8 Vantage apparently has 200 cell cats and an aftermarket Quicksilver muffler and is too loud for me. I have a stock muffler coming in and was curious how 200 cell cats would sound with a stock muffler??
As is, the sound (besides being bloody loud) is very "crackling" like a race car decelerating (snap, crackle, pop!). Is that from the cats or from the QS muffler?
Does anybody here have experience with combinations of cats/mufflers and what affects sound the most? Maybe some sound clips??

I picked up a stock exhaust and installed it a couple days ago. I'll see how it sounds when I get around to driving the car again (long winters up here, lol). I can live with the crackling, but not at that volume!
Installed the VAP 200 cell cats last week. Took about 4-5 hours. Really like the improved exhaust note and performance bump. Have been running VAP stage 1 tune for last 3 years (improved throttle response, active exhaust timing / opening changes, and slight bump in redline). I sent them my originally modified tune file from 2017 and they updated it for the new cats at no cost.. Like may others have said. highly recommended updates.

I also have a 2010 and it was way too quiet for me... here's some vids of right after I installed em, 200 cells with stock exhaust and only other mod is tune and intake kit
sounds much deeper and it is only super loud if you really mash the throttle, which I was exaggerating for effect in these videos 10/10 would highly recommend
I have to have at least one cat for emissions so essentially, I'm asking if anyone has a dyno result or knows which combination is worthwhile. I know the VAP headers are way more expensive than 200 cell cat so just looking to see the power gains from it.

A big difference would be the level of effort for the install. For the car in your signature, the second option you've listed is certainly the easiest. Power wise, the difference between the your two options (from what I've researched), the should be about 10-15 bhp higher with the VAP headers. This assumes the car also has an ECU remap in both cases.
