Have you and your wife looked into the Porsche Driving Experince at Barbar Motorsports? I did it last year, took two classes back to back, (4days)...
It sounds like it would be up your alley... That track was as cool as cool gets... very scenic, elevation changes, and just an all out blast..... The school itself is very good... I learned a lot... just throwing it out there..
