whats the best way to clean carbon build up ?

Model/year? And it's the intake valves that usually have a problem, not a manifold. If you have carbon in the manifold you have way more problems..

2009 Cayenne 3.6
im going to change the air oil seperator diaphragm underneath the manifolds
