Based on what I see here in Calif I'd guess 3-5 years but I'd prefer to find an established farm for sale so that it needs only maintenance and then harvest w/in the 1st year for a quick ROI.
Maybe 20-40 hectacres or more. it would all depend upon what's available.
I like the Tuscany area near Certaldo if you know the area. It's a bit South of Florence.
