For the same primary reason they would be used on a heavy car, or race cars: the weight savings.

I think you mean "steels will overheat on the track as well". It isn't a given either will overheat; it all depends on conditions and the driver.

If I go to the track on a hot day and happen to have a heavy foot that day, I would rather pay for new iron rotors than new PCCB. It's as simple as that.

Exactly. If you have GT3 brakes and fresh fluid.........nary a prob.
PCCB, for me, = crap.
