Apples and oranges. The Cayman is a great car. But if you can afford a GT3, there is no question about which to buy. The GT3 is the real deal. I am on my 6th 911, the RS is my first GT3, it is the car that made me realise what driving was all about...

I traded a cayman S for my 2010 GT3... The cayman rocked and I miss some things about it. I loved the way it sounded w/ aftermarket axhaust and rarely turned the radio on. It was amazing well balanced and just really fun to drive, even if a bit under-powered. The GT3 is a whole different animal. It makes me giggle and I often get that warm and fuzzy feeling, even at idle stopped in traffic. At WOT, I sometimes cry a little with joy. OK fine, I've never actually cried...but it can be an emotional experience. Its so much more viceral and connected. I've owned, driven, raced a lot of the best porches over time. This one takes the cake. It communicates with me more than anything else I've owned. If you can do it...do it.
