Please help me decide a color for my roll bar
, in a DD car a rollbar is a pain in the ***!! (total restricted acces to rear space, more weight, more noise, less vision), just my $0.02
And I wanted it for safety/protection...but now im reading that some say a bolt in cage does not really help, needs to be welded...and that it can actually be more dangerous cause in a major crash if it disconnects can hit you inside, or your head can fly into it????

A medium-matte black will be perfect. IMO, a c*ckpit needs to be understated and not distracting. This was advice given to me from a seasoned GT2 LM's (RSR) driver. Also, good taste is the great divide in what separates Porsche driving enthusiasts vs. fast and furious enthusiasts.
I would not get a cage unless you are getting racing seats (how about GT2 seats - these are great, as they fold forward, have harness slots, offer racing-seat side support and are comfortable and easy in/out for daily use). I will also say that having proper support will provide a performance boost in that you will be able to focus 100% on driving vs. spending energy trying to stay in the seat during hard turns. Adding racing seats vastly improved my lap times. Also, with the cage, it's really hard to clean the back windows. This would be a pain in a daily driver. It also eliminates the use of back for storage that would be handy in daily driving vs. track car. Given what you use your GT3 for, it seems like an unnecessary thing. Especially since you don't want to change your seats.

I'm sure there's plenty of upholsterers in the L.A. area. I'd suggest hitting up Coastline Collision Clinic in Santa Ana. They're extremely picky. They do a lot of work for GMG and have all the connections. Their upholsterer is doing the headliner on my GT3 (I did carbon roof with sunroof delete) and I'm sure they can point you in the right direction.
