Removing cats will DECREASE the exhaust gas temperature. The catalytic reaction to convert some of the gases into harmless ones is what heats the cat converters up to 800 degrees Celsius. The stories of the exotics catching fire are due to problems with the cats. If you bypass the cats entirely, you're effectively reducing the temperature of your engine and exhaust system by at least a few hundred degrees.
