There needs to be (an executive?) decision about whether the group wishes to go for an "omakase" meal (where the chef decides the food and courses) or "a la carte" ordering off the menu. When I arranged the last one I set the budget at $55/pp (including tax & tip) for an omakase meal. That's a little light for sushi if you like lots of toro, hamachi and the like. The advantage of the omakase is that it's pretty good value, it's avoids the boring "who ordered the diet-coke ?"-type accounting at the end of the meal, and everyone pretty much gets to eat at the same time. The disadvantage of course is that it's hard to set a budget with which everyone is comfortable.
